Upright Rosemary (Salvia rosmarinus, formerly Rosmarinus officinalis) is a robust, strongly aromatic perennial herb forming an upright, shrubby mound of needle-like, deep green leaves with silvery undersides and an intensely resinous, pine-like fragrance. One of the most prized culinary herbs in the world, it is equally outstanding as a landscape shrub in Austin’s climate — thriving in heat, drought, and poor soils with minimal care once established. Small lavender-blue flowers appear in late winter through spring, drawing bees and other pollinators. Upright varieties such as ‘Tuscan Blue’, ‘Arp’, and ‘Hill Hardy’ are well-suited to Central Texas and can grow 4–6 feet tall and wide, making them excellent as hedges, specimen plants, or anchors in the herb garden.
